CHINESE - BEGINNING
Enrollment is limited to 12 students. This is the first of two beginning Chinese cooking classes. During this 4-hour workshop you will learn some of the basics of Chinese cooking and be able to prepare a complete Chinese dinner. You will learn the essential techniques of slicing and chopping, proper preparation of vegetables, stir frying techniques and preparation of Chinese sauces. Our menu will include: Home Style Fried Rice, Cashew Nut Chicken, Sweet and Sour Pork, Pan Fried Chow Mein and Almond Float Dessert.

FISH AND SEAFOOD
Enrollment is limited to 12 students. Fish and seafood are healthy and delicious. During this 4-hour class students will explore some new ways and some time-honored ways to prepare fish and seafood. LET'S MAKE TAMALES
Enrollment is limited to 12 students. Tamales are a traditional Mexican party food and almost always prepared communally. It is a real social event. Making tamales is a lot easier than you might imagine, especially with a lot of helping hands. We will make chicken, pork and a sweet tamale. SOUTHWEST/SANTA FE COOKING
Enrollment is limited to 12 students. The cuisine of the Southwest and Santa Fe has been greatly influenced by the indigenous peoples of the area, the Spanish, the different settlers to the region and the newcomers. During this 4-hour class we will be preparing five dishes that are common to this area. We will prepare: Navajo Fry Bread (Sopaipillas), Indian Tacos, Green Chili Casserole, Tortilla Soup and Cornish Game Hens with a Jalapeño Jelly Glaze.
